Shannon Schafer, BS, NE
Shannon is a certified Nutrition Educator and graduate of Bauman College of Holistic Nutrition and Culinary Arts in Berkeley, California. She works individually with clients to develop nutrition programs appropriate to their needs. Helping clients find a natural path to well-being and radiance is a strong passion of hers. After overcoming her own health issues by embracing a whole foods diet, she can relate to many client’s concerns. Shannon specializes in digestive health, calming allergies, and building the immune system. She is dedicated to helping people look and feel their best!

The skinny on cranberries!
Can cranberries help keep you thin?
The answer is yes! Cranberries have large amounts of organic acids that have an emulsifying effect on fat deposits. Nutrition and detox guru, Anne Louise Gittleman, recommends cranberry juice to rid the body of unwanted cellulite.
Check out my healthy dessert recipe below. This sugar free dessert will keep blood sugar stable, fulfill sugar cravings, and ensure you get your daily anti-oxidants.
Cranberry Cherry Pudding

For the Pudding:
1 package of organic frozen cranberries
1 package of organic frozen cherries
4 1/2 teaspoons arrowroot
2 Tablespoons water
10 drops Vanilla Stevia or to taste
1 Tablespoon Vanilla
Cinnamon and Nutmeg
Heat cranberries in saucepan over medium heat. Add cherries and stir. Once the cranberries begin to pop, add Vanilla Stevia, Vanilla, Cinnamon and Nutmeg. Dissolve the arrowroot in 2 Tbs water and stir into pan. Simmer for ten minutes, ensuring most cranberries pop.
Top with whip cream!
*You can use pears or apples in place of cherries too!
