I have been experimenting with ways to beef up my taco salad. Whether you are starting with fresh ingredients or left overs, I came up with a salad that is quick and fulfilling.

1 lb. of ground turkey, chicken, or beef or whatever meat you have on hand

3 tbs of water

1/3 cup of diced onion

1 cup cooked brown rice

1 can of black beans

1 cup of cooked whole kernel corn

Favorite salad mix

Taco or Mexican style shredded cheese

Can of diced tomatoes

Sour cream

Tortilla chips, crushed

Flour tortillas

Russian dressing

1 packet of taco seasoning

Fully cook meat in a skillet with 3 tbs of water over medium high heat. The water helps to draw the fat out of the meat. Drain, return to skillet,  and add taco seasoning according to the packet. Add onion.

While meat is cooking place flour tortillas in foil and place in oven to warm.

Once meat is cooked and seasoned, remove from heat. In medium size "cereal" bowl place a flour tortilla. Scoop a desired amount meat, beans, corn, and rice into it. Then add your cheese, salad mix, tomatoes, and crushed tortilla chips. Top with a dollop of sour cream and drizzle with Russian dressing.

I like to lightly toss it inside the tortilla. I use a fork to start eating the salad, and then when it is at a manageable size, I just pick the rest up in the tortilla eat it. This meal is very filling and can be varied in so many ways. Hope you have fun with this one...

In our last blog we discussed what cancer was, where it came from and that everyone of our bodies has fought cancer at some point in our lives. So the Questions I left you looming with were:

How do you prevent this common mutation from getting to the point where it is cancerous? What else can be done other than radiation? What does radiation do the body? How does mangosteen fit into the picture?

Prevention:

In the U.S., we are not proactive, but reactive when it comes to our health. We go to the doctor when the pain is unbearable, once our family members force us to go, or when we are in need of emergency assistance. Yet, if you tell someone to eat better, supplement, and exercise, its excuse after excuse that hangs in the sound waves.

Next to diet and exercise, supplementation is one of the most important thing we can do to assist our body in its daily battle against free radical damage as well as cellular mutation.

With Halloween fastly approaching, I thought it would be a good idea to share some of the recipes that I like making with my kids.

Haunted Taco Tarts

1 TBS. vegetable Oil (to make it more healthy use olive oil)

½ cup chopped onion

1 clove (minced) garlic

Oregano, chili powder, onion powder and salt to taste or just use your favorite taco seasonings

Ground turkey ½ to a pound

½ cup chopped tomatoes

¼ cup diced red, green, and yellow bell pepper mix

½ cup of the cheese of your choice

1 (15 oz) package of refrigerated pie crust

1 egg white

Halloween Cookie cutters about 3 inches in diameter

            Preheat oven to 375 F

            Lightly grease cookie sheets and Prepare Egg Paint and set aside

Heat oil in large skillet over medium heat (water can be substituted for oil and it helps draw out the fat in the meat). Add onions, turkey, garlic, oregano, onion powder, chili powder, salt, and peppers to skillet. Cook until no longer pink.

On a lightly floured surface, roll out crust. Cut out pairs of desired shape. Place on cookie sheets and brush edges with egg white. Spoon 1 tablespoon of mixture into the center of the shape. Add a sprinkle of tomatoes and cheese and top remaining shape together to form a pocket. Press edges together. Decorate with egg yolk paint and bake 10-12 minutes or until brown.

Makes about 14 tarts.

Egg Yolk Paint (see below)

            4 egg yolks

            4 tsps. Water divided into 4 small containers

            Red, yellow, green and blue liquid food colors

Place 1 yolk (each) in 4 small containers. Add 1 tsp to each as well as a few drops of food coloring to each and beat lightly.

  XanGo is Coming to Town!

A lot of people have been asking me why I am so excited about Xango. So I thought it was time that I told my story so everyone could read it:

 From the time I was a little girl, I can remember my mother going in and out of the hospital. She would gain and lose weight faster than I could think. It got to the point where I did not expect her to come home one day because of her frequent battles with a disease called Sarcoidosis.

Well about 3 years ago, my mother attended a meeting where a Dr. spoke about Xango and the great results he had seen with his patients. My mother began to try this "juice" after having tried another "juice". I figured it would be the same old thing. Yet remarkably she began to get better. Her flare ups lessened. Pain lessened. Suddenly her weigh began to drop off. She was happy, healthy, and herself again.

This prompted me to try the juice. Since I was 12 years old I have suffered from severe migraine headaches. There have been times where they were so severe that I could not function. One episode got so bad that I stayed home from school. (I had forgotten this story until my mom reminded me a few weeks ago.) That morning I took 2 Tylenol and went back to bed. Well as an adult, having to teach children and coach it was almost unbearable! Every medication that I tried left me a zombie or hugging the toilet. This was just no way to live.

On that Friday, I got up happy, full of energy, and to my amazement-no headache! I was excited and continued to drink the juice until that bottle was gone. I went a week or so and still no headache. The World will definitely be a little less wonderful without the loving and kind personality found in Sharon Unkefer.  On August 13, 2008, she lost her battle with cancer, but never lost her battle with the gift of changing people’s lives.

This picture was just taken at our regional convention in May of this year. It was my one and only chance to get to know an inkling about a woman who had the opportunity to touch countless lives with her giving heart and desire to see that everyone that crossed her path was left with a piece of her. Upon our meeting, I walked up to her and broke the ice by simply saying, “Has anyone ever told you that you look like Vicki from the soap opera One Life to Live? She immediately laughed, and began to tell me of a few stories in which she had experienced as the result of her appearance.  In that moment, I felt as if I had known her forever. We were just old friends catching up and that we were definitely equals. She was just as all the top earners in the company had described her. She did not waiver because she was such a successful person. Instead she became more loving and caring each moment I continued to talk to her. From those few moments, I took away a large piece of her thoughts, her ideas, her persona and her will to live for God to the utmost of her ability.

Thank God for allowing someone with such great influence and a giving heart to take a moment of time to change the life of a young lady striving to be successful in life. That one moment will forever be etched in my mind and fuel me FOREVER! The world needs more Sharon Unkefer’s.
